THE Summer Salad Dressing
This is the best and most versatile dressing. It is good on EVERYTHING and makes everything seem so fresh and vibrant. Feel free to add or subtract the amount of shallot and garlic used - I tend to like a lot! Most of the things in this can be subbed too, which is why I also like it so much. Don’t have champagne vinegar? White wine vinegar or rice vinegar will do. Sub the shallots for another allium (green onion anyone??). So easy!
Ingredients:
1/2 cup truffle olive oil (or sub regular EVOO + truffle salt)
1/4 cup champagne vinegar
1/2 - 1 shallot, finely chopped
2 garlic cloves, minced
Zest + juice from 1 lemon
Handful of each: fresh dill, basil, thyme, oregano (chopped)
S+P to taste
Directions:
Blend all ingredients together except the fresh herbs. Gently stir in herbs and pour on alllll of the salads. Enjoy!
