Protein French Toast Bake
I have made many versions of this over the years, so I decided to finally share my version today! I have never written down the measurements before, oops :) For best results, I do recommend using Clean Simple Eats protein powder - I can’t vouch for any other protein powder in this recipe but if you use something else and it works, let me know. This makes enough for roughly three people (very hefty servings) or if you are serving it with other breakfast items like eggs, fruit, and sausage then easily can serve four.
Other suggestions for flavor combinations that I recommend include using vanilla protein power and small diced up strawberries with mini chocolate chips (SO GOOD) or banana or chocolate protein powder with banana slices. The possibilities are endless.
Now let’s talk the custard base: I don’t love super eggy French toast, but if that’s you I would recommend decreasing the amount of milk by like 1/4 of a cup and adding a few eggs. More protein that way too!
Ingredients:
Stale sourdough bread (I used roughly half of a loaf)
1 cup 2% or whole milk (feel free to use a dairy free milk, I’ve tried it with almond and cashew)
3-4 eggs (depends on size, 3 large eggs or 4 smaller ones)
1 tsp vanilla extract or paste
1/4 cup maple syrup (can sub for brown sugar but will need to add more liquid)
2 scoops of cinnamon roll or snickerdoodle protein powder (Clean Simple Eats brand)
1/4 cup flour (all purpose is fine!)
1/4 cup brown sugar
1/4 cup cold sliced butter
1/2 tsp ground cinnamon
Dash of salt
Directions:
Preheat oven to 350 F. Meanwhile, cut bread into cubes and set aside.
In a large bowl, mix milk, eggs, vanilla, maple syrup, and protein powder together. Add bread and stir to coat. Let sit for a few hours. If there is not enough liquid for the bread, add more milk.
To make topping, mix equal parts flour, brown sugar, and butter. I put suggested amounts for this, but feel free to go nuts if you love crumble topping! Add dash of salt and cinnamon. Mix together; the butter should be cut into the mixture until crumbles form.
Pour bread mixture into small (like an 8x8 inch) casserole pan. Sprinkle crumble on top and bake for around 40 minutes (top should be crisp and brown). You may need to let it bake for a few more minutes but I would start checking around 40 minutes. Enjoy alone or topped with maple syrup!
