Dairy-Free Shamrock Shake
Growing up, I definitely looked forward to March and going to McDonalds (where are my fellow children of the nineties at?!) where the combination of a delicious and minty shamrock shake with salty french fries was the highlight of my day. Fast forward a few years, and I was HORRIFIED after I read the ingredients of a shamrock shake - don’t get me wrong, totally OK to splurge every once in a while, but my tummy was already dreading the dairy in the shakes so it was time to find a homemade version. Without further ado, here is the easiest homemade shamrock shake that you’ve ever tasted! I highly recommend using coconut milk-based ice cream and milk for the creamiest shake (almond, cashew, and hemp don’t do the same thing - trust me, I tried).
Here’s what you’ll need:
1 cup coconut milk ice cream (use So Delicious for best results)
1/2 to 1 cup coconut milk (not canned)
1 tsp peppermint extract (Simply Organic is what I use)
Optional: green food coloring like Watkins, sprinkles, extra scoop of ice cream
Here’s how to make it:
In a food processor or very powerful blender, combine ice cream, milk, peppermint extract, and food coloring if using. Pulse blend until smooth - start off with 1/2 cup of milk and then add more as needed. Pour into a glass, top with sprinkles, and enjoy!
