Spinach Bars

These are the EASIEST bars in the world to make - chockfull of spinach, easily customizable with any type of cheese you want (including non-dairy cheese!) and super satisfying as snack or lunch when served with a salad. My mom has been making this recipe since high school, so you could say it’s been in my family for a long time. She likes to use swiss cheese or a combination of swiss and mozzarella. I love mozzarella and parmesan or some gouda (YUM).

Here’s what you’ll need:

  • 1 pound frozen spinach, thawed

  • 1 pound shredded cheese of choice (highly recommend a blend!)

  • 4 eggs (my mom uses 5 - I like 4)

  • 1/2 yellow onion, chopped

  • 2 Tbsp butter

  • Optional spices: za’atar, cayenne pepper, sesame seeds, etc.

Here’s how to make them:

Preheat oven to 350F degrees. In a medium saucepan, saute onion in butter until soft. Squeeze out excess water from thawed spinach (easiest to just use your hands). Throw the spinach into the pan with the onions and butter for a minute and then turn off the heat to let cool. In a small bowl, beat together the eggs, spices, and cheese. Add in the spinach and onions. Spread mixture into a greased pan (I use a loaf pan for thicker bars and a square pan for thinner bars). Bake for about 30 minutes until light brown on the top. Let cool slightly before cutting into squares. They keep for 2-3 days in the fridge if you don't devour them all immediately!
