Strawberry Mojito Popsicles

Who doesn’t love popsicles? On a hot day, they are an amazing way to cool off AND they taste delicious. The only thing that could possibly make them better? Turning them into a cocktail.  

The first time I had an alcoholic popsicle drink was at this bar in NYC (Loopy Doopy) several years ago - it had prosecco and a yummy flavored popsicle that slowly melted and flavored the sparkly drink. I WAS HOOKED. 

The wheels started turning as soon as strawberries came into season this year, and among other things, strawberry mojitos with mint from my garden came into mind. 

Here’s what you’ll need:

  • 1 cup fresh strawberries, chopped (make sure it is a HEAPING cup) 

  • 1 tbsp fresh lime juice (half of a lime give or take!)

  • 1 tsp honey 

  • 6 fresh mint leaves 

  • 6 oz sparkling water or club soda 

  • 1 oz clear rum (optional)

Here’s what to do:

In a food processor or blender, combine strawberries, lime juice, honey, and mint until purée is fully liquid. At this point, you can decide to strain it if you dislike the texture of small seeds (just use a cheesecloth and pour mixture over it into a bowl). Pour purée into popsicle molds, freeze for 30 minutes, take out of freezer, and then place popsicle sticks into purée. Freeze for at least another four hours and voila! To remove, briefly run molds under warm water for about 10 seconds. This yields four smaller popsicles. 

For a non-alcoholic version: place popsicle into glass and pour sparkling water over the top. Enjoy! 

For alcoholic version: pour club soda and rum into martini shaker with ice and shake for about 10-20 seconds (this also works with a mason jar and lid). Pour soda + rum into lowball glass, place popsicle inside, and serve.
