Indian Fusion Grilled Cheese
Ok so fair warning: you will want to eat a million of these grilled cheese. Something about the tantalizing combination of chutney, cheese, and onions is … addicting to say the least. Also, do NOT skip out on frying them in the ghee, garlic, and ginger - it seeps into the bread and makes it EVEN better. Also, my best friend (who happens to be Indian) said that real chutney is more like a dip and not a preserve so I highly recommend going to a real Indian supermarket to get that and the garam masala for the dip.
Here’s what you’ll need:
4 Tbsp ghee
1 white onion, thinly sliced
1 garlic clove, minced
1 small nub ginger, minced (or 1 tsp ginger paste)
4 slices bread
4 slices cheese (I use combination of sharp cheddar and muenster)
4 Tbsp mango chutney
1 roasted bell pepper, seeds + skin removed
1 cup greek yogurt
1 tsp garam masala
Salt and pepper to taste
Here’s how to make it:
In a frying pan, heat up one tablespoon ghee over medium heat and throw in the onions. Cook until caramelized and remove onions from pan. While the onions are cooking, start to assemble the sandwiches by spreading 2 Tbsp on the bottom slices of bread, top with 2 cheese slices each, and then half of the onions on each slice. Slather the outsides with ghee.
Using the same frying pan, heat up another tablespoon of ghee and put the garlic and ginger in - stir to combine and then lay the grilled cheeses on top of the butter. Warm each side up for a few minutes until the cheese is melty inside and then take off heat and cut in half diagonally.
While they are cooking, make the red pepper sauce by blending the pepper, greek yogurt, garam masala, and salt and pepper to taste. Pour into a small bowl for serving.
