Apple Crisp Bites
Guys ….. these are SO good. I made these sort of on a whim because I was craving apple crisp and wanted something portable. These exceeded all expectations! You can use whatever type of milk you want and same for substituting out the almond butter (cashew butter would also be BOMB).
Ingredients:
1/2 cup oat flour
1/2 cup almond flour
1/4 cup whole oats
1/4 cup applesauce
1 tsp cinnamon
1 Tbsp milk of choice
2 Tbsp almond butter
1 tsp brown sugar (I use Lakanto golden monk fruit sweetener)
1/2 cup apple, diced finely
To assemble:
Combine all dry ingredients in a large bowl. Add everything else except for the diced apple. Once batter is combined, slowly fold in apples. Dough should be sticky but easy to roll into balls. If too dry: add milk. If too wet: add whole oats.
Roll into balls and place in fridge to set for a few hours. At this point, I drizzled white chocolate on top for some fun! Cinnamon chips would be delicious in the dough too. Keeps for 2-3 days in the fridge but best when eaten immediately!
Makes roughly 8 balls.
