Everything Bagel Donuts
If you’ve never had an everything bagel donut before, you are MISSING out. The combination of savory and sweet is mind-blowing, and I actually prefer it to a regular everything bagel with cream cheese! These donuts are super simple to make - the donuts themselves are gluten-free made with almond and coconut flours, the frosting has MINIMAL sugar (only used honey), and the seasoning is easy as heck because it’s ready when you buy it!
Here’s what you’ll need:
For the plain donuts
3/4 cup almond flour
1/4 cup coconut flour
3 flax eggs (or regular eggs - both work well here)
2 Tbsp honey, maple syrup, or monk fruit sweetener
1 Tbsp coconut oil
1 tsp vanilla
1/2 tsp baking soda
For the vanilla frosting
1/3 cup almond milk cream cheese, softened
2-3 Tbsp almond milk
1 tsp vanilla
2 Tbsp honey
For the topping
2 Tbsp Trader Joe’s “Everything but the Bagel Sesame Seasoning Blend”
Here’s how to make them:
Heat the oven to 325 degrees F, and spray a six-donut pan with cooking spray. Start making the donut batter by combining all of the dry ingredients in a medium-sized bowl. Crack eggs into a separate small bowl and add the rest of the wet ingredients. Pour the wet mixture into the flour bowl and stir until well-combined (there should be no chunks!) Fill each donut well about half-way - the dough isn’t as scoopable as normal dough so using your hands to fill and press works really well! Bake for 10 minutes and let cool before frosting.
While donuts are baking, make the frosting! Soften the cream cheese in a microwave-safe bowl for about 20 seconds, and then add the rest of the ingredients. I find that the cream cheese gets a little chunky, but if you keep stirring it / use a whisk, they come out in no time! Easiest way to glaze these babies is to dip a donut upside down in the glaze and place on a pan (right side up obviously) to decorate. Using about 1 tsp per donut, sprinkle on that everything bagel seasoning and let set for about 20 minutes. Eat, and enjoy!
Extra donuts should be stored in the refrigerator due to the easily spoilable nature of the donuts and frosting.
