Coconut Donuts with Lemon Glaze

If I can healthify my favorite foods, WHY NOT? *things I tell myself daily* 

But seriously, donuts are very high up on my list of favorite foods, so I'm always looking for ways to consume them in healthier ways! These are made from almond flour, eggs, baking soda, coconut shreds, and honey. That's it. Sometimes I throw in some vanilla or almond extract if I'm feeling extra fancy that day!  

Here's what you'll need: 

  • 2/3 cup almond flour (not meal) 

  • 1/3 cup coconut shreds, unsweetened 

  • 1/2 tsp baking soda 

  • 2 medium sized eggs 

  • 2 Tbsp sweetener of choice (I use honey or maple syrup usually!) 

  • 2 Tbsp coconut butter 

  • 1/8 cup coconut milk, unsweetened 

  • 1 Tbsp honey 

  • lemon zest from one lemon 

  • 2 Tbsp lemon juice

Here's how to make the donuts: 

Preheat oven to 325F. In a medium-sized mixing bowl, combine dry ingredients (almond flour, coconut shreds, baking soda). Slowly add eggs and honey - stir to fully incorporate. Batter should be decently runny and smooth consistency (you may have to stir for a bit to get the clumps out!) Grease donut pan with heat-tolerant oil, and fill donut wells about halfway with donut mixture. Bake for about 10 minutes until cooked through (test using a toothpick!). Let cool completely before eating. Store in the refrigerator or they will spoil! 

For the glaze: 

I'm not one to typically measure my ingredients out (big fan of the eyeballing it method), but this glaze was SO easy to make, and even easier to recreate. Heat coconut butter in a small bowl until melted. Add milk and stir until coconut butter is dissolved in the milk. Add honey, zest, and juice. Whisk to combine. Drizzle over donuts (make sure they are cooled before doing so, otherwise they will absorb into the donuts).
