Green Curry Paste and Pizza Sauce

I think that curry paste is something that everyone should try making at least once in their life - the complexity of flavors (and personal satisfaction) cannot be bought in a store. I love all types of curry paste, but green curry happens to be my favorite for anything and everything. This paste is good in soups, stews, sauces, dips...basically EVERYTHING. For convenience's sake, I buy lemongrass and ginger either pre-chopped or pureed to make it easier for me to meal prep! You can find these at most supermarkets already prepped as well. 

Here's what you'll need for the paste: 

  • 1 Tbsp lemongrass paste (I use a few small scoops of chopped lemongrass in a jar I got at WF) 

  • 2 garlic cloves 

  • 2 serrano chiles (seeds removed for more mild sauce - use jalapeño if you cannot find serrano) 

  • 1 large handful of cilantro (stems removed - just the leaves) 

  • Juice of 1/2 lime

  • 1 Tbsp ginger puree 

  • 2 tsp turmeric powder 

  • 1 tsp cumin powder 

  • 1 tsp sea salt 

  • 1 tsp sugar 

Blend everything together in food processor, scraping sides down several times while blending. Store in airtight container  in the refrigerator for up to two weeks or freeze. 

For the pizza sauce: simply blend together 2 Tablespoons curry paste, 1/3 cup soaked raw cashews, and 1/3 cup unsweetened coconut milk. This also makes a delicious sauce for raw veggies, crackers, etc.
