Peppermint Chocolate Walnut Bites

Hopefully you guys aren’t sick of peppermint chocolate EVERYTHING yet! It’s hands down my favorite combination around the holidays, and it’s surprisingly versatile and works in almost every type of dessert! These little balls are full of protein, healthy fats, and gluten-free oats.

Feel free to substitute any type of sugar for the coconut sugar in this - I would stick to brown or cane sugar though (not liquid).

Here’s what you’ll need:

  • 1 cup old fashioned gluten-free oats

  • 1 cup raw walnut pieces

  • 1/4 cup unsweetened nut milk

  • 2 Tbsp coconut oil, melted

  • 2 Tbsp coconut sugar

  • 1 tsp peppermint extract

  • Optional: 2 scoops collagen peptides

  • Peppermint candy and melted chocolate for topping

Here’s how to make them:

In a food processor, combine oats and walnuts until they resemble a coarse flour. Add in the rest of the ingredients and pulse until combined but not liquified. Roll into balls using about a tablespoon per ball and place on wax paper. Drizzle with dark chocolate and top with crushed peppermint candy. Pop in the fridge for about 20 minutes to set and enjoy! Store in fridge for up to two weeks - thaw for ten minutes before eating.
