Pomegranate Bliss Balls
Pomegranates ALWAYS remind me of little jewels, and fall is the best time to eat them! It was only fitting to take these absolute powerhouses chockfull of protein and healthy fats and add pomegranates to them…
Oh, they are also vegan, gluten-free, contain no processed sugar, only have 6 ingredients, and are HIGHLY addictive :)
Here’s what you’ll need:
3/4 cup almond flour
1/4 cup cashews, soaked for 2-3 hours and rinsed
1/2 tsp cinnamon
1/4 cup pomegranate juice
1/2 tsp vanilla paste
1 Tbsp honey
Pomegranate seeds for topping
Here’s how to make them:
Combine the flour, cashews, cinnamon, juice, vanilla + honey in a food processor until well-combined and uniform in size. Dough will be sticky, but quickly roll into small balls and pop in the freezer for 2-3 hours until set. If desired, coat with melted coconut butter, melted white chocolate, or yogurt+ top with pomegranate seeds. Throw in the freezer for another to set and then eat or serve!
They should be stored in the freezer until you eat them or they will loose their shape.
