Lemon Fat Balls
I first heard of bliss balls a few years back while searching for new ways to eat granola and oats on the go - the first recipe I tried from Pinterest was a DISASTER. They were disgusting, and I wasted a ton of money on them (raw cashews, other nuts, hemp seeds, etc. were in them). Needless to say, I avoided the concept for a while until Lee Tilghman (of Lee from America) brought a variation of them to my attention last year on her blog. I liked the idea of satiating "fat balls" as she calls them, but I wasn't super hyped on the flavor when I made them for the first time. They kept me full for HOURS, yet sometimes I felt like I had to choke them down.
I used to be obsessed with Luna's lemon zest bars, but after finding out the amount of random stuff in them, I vowed to make a healthier version that was just as portable. Enter: my lemon turmeric bliss balls. I've made these balls at least five different times, and EVERY SINGLE TIME they turn out a little different. That's ok though - they are never gross tasting or inedible don't worry ;)
Here's what you'll need:
1/2 cup coconut shreds
1/4 cup coconut oil, melted
1/8 cup coconut butter
1/2 cup cashews
1/2 cup pecans
1-2 tsp turmeric (totally your preference - I dump a ton in)
sprinkle of black pepper (to activate turmeric)
1/2 tsp cinnamon
1 scoop collagen peptides
2 Tbsp honey
1 Tbsp hemp seeds
2 tsp lemon zest
1/3 cup almond milk
The easiest directions ever:
I recommend blending up the cashews + pecans first (or whatever nuts you use) in a food processor and then adding the rest of the ingredients, with the milk last. The dough should be pretty wet, and it may not seem like they will stay together, but they will! If you need to add a tad more dryness to the mix, feel free to add more hemp seeds, coconut shreds, or even almond flour (I love the extra nuttiness the almond flour adds). Roll them into small balls with your hands (roughly 1/8 cup for each one) and let chill in the freezer overnight. Store in a freezer-safe airtight container, and they will last you forever!
Note: do not store anywhere but the freezer long-term or they will melt.
